Moroccan Lentil and Carrot Soup

INGREDIENTS
  • 6 cups water
  • 2 cups lentils rinsed
  • 2 vegetable bouillon cubes
  • 6 carrots diced
  • 6 roma tomatoes diced
  • 1 large onion chopped
  • 4 garlic cloves minced
  • dash of olive oil
  • 1 teaspoon curry
  • 1 teaspoon paprika
  • 1 teaspoon cinnamon
  • salt and pepper to taste
  • cilantro to garnish
DIRECTIONS
  1. In large pot with water cook lentils, bouillons and carrots for 30 minutes or until soft.
  2. Add tomatoes to the pot and stir.
  3. In a pan saute onion and garlic with oil and add to pot.
  4. Then mix in all spices and cook another 5 minutes.
  5. Garnish with cilantro.
