Mother's Matzo-Meal Sponge Cake
INGREDIENTS
  • Cooking Time: 45 to 50 minutes
  • 10 egg yolks
  • 2 C minus 2 T sugar
  • 3 T juice
  • 1/2 tsp almond
  • pinch salt
  • 1-1/4 C finely sifted matzo meal (or finely crushed matzo)
  • 10 egg whites, beaten stiff
DIRECTIONS
  1. Separate eggs.
  2. Beat egg yolks until light.
  3. Add sugar and beat again.
  4. Then add salt, lemon, almond, then matzo meal.
  5. Beat egg whites until stiff, but not dry.
  6. Lastly fold in beaten egg whites beaten.
  7. Pour into spring form pan or two layer pans.
  8. Bake at 350 degrees for 45-50 minutes.
