Mrs. Hart's Peach Cobbler
INGREDIENTS
- Crust:
- 1/2 c unsalted butter
- 1 c all purpose flour
- 1 c granulated sugar
- 1 c milk
- 3 teaspoons baking powder
- 1 pinch salt
- Filling:
- 6-8 cps sliced peaches fresh or frozen (thawed)
- 1/4 c lemon juice
- 3/4c orange juice
- 1 c granulated sugar
- 1/2 c butter
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 tablespoon cornstarch
DIRECTIONS
- Preheat the oven to 375°F degrees.
- Put the butter in a 13 x 9 x 2-inch baking dish place in oven until melted.
- In medium bowl, combine the flour, 1 cup of sugar, baking powder, and salt; mix well and set aside.
- Combine peaches, lemon juice and orange juice.
- Heat peaches, juices and butter in a saucepan over medium heat until butter is melted.
- Mix in sugar, spices and cornstarch; remove from heat and set aside while you finish the crust.
- Add the milk to the crust and stir until just combined.
- Pour the batter over the butter. DO NOT mix together.
- Pour the peaches over the batter, but do not stir in; sprinkle with cinnamon and nutmeg.
- Bake in preheated oven for 40 to 45 minutes, or until the top is golden brown. Serve warm or cold.
