Mrs. Hart's Peach Cobbler
  • Crust:
  • 1/2 c unsalted butter
  • 1 c all purpose flour
  • 1 c granulated sugar
  • 1 c milk
  • 3 teaspoons baking powder
  • 1 pinch salt
  • Filling:
  • 6-8 cps sliced peaches fresh or frozen (thawed)
  • 1/4 c lemon juice
  • 3/4c orange juice
  • 1 c granulated sugar
  • 1/2 c butter
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 tablespoon cornstarch
  1. Preheat the oven to 375°F degrees.
  2. Put the butter in a 13 x 9 x 2-inch baking dish place in oven until melted.
  3. In medium bowl, combine the flour, 1 cup of sugar, baking powder, and salt; mix well and set aside.
  4. Combine peaches, lemon juice and orange juice.
  5. Heat peaches, juices and butter in a saucepan over medium heat until butter is melted.
  6. Mix in sugar, spices and cornstarch; remove from heat and set aside while you finish the crust.
  7. Add the milk to the crust and stir until just combined.
  8. Pour the batter over the butter. DO NOT mix together.
  9. Pour the peaches over the batter, but do not stir in; sprinkle with cinnamon and nutmeg.
  10. Bake in preheated oven for 40 to 45 minutes, or until the top is golden brown. Serve warm or cold.
Simple and sweet.
