Mushroom Soup

INGREDIENTS
  • 6 cups water
  • 2 large potatoes peeled and diced
  • 2 vegetable bouillon cubes
  • 1 onion chopped
  • 4 garlic cloves minced
  • 2 cups mushrooms sliced
  • dash of olive oil
  • 1 cup plain almond milk
  • 4 TBSP almond butter
  • salt and pepper to taste
  • bunch parsley chopped for garnish
  • small bunch chives chopped for garnish
  • dash of olive oil
DIRECTIONS
  1. In pot boil water and add potatoes and bouillons and cook for 20 minutes.
  2. In pan saute onions, garlic and mushrooms with oil.
  3. Add almond milk, almond butter, salt and pepper to taste and cook another 10 minutes.
  4. When soup is ready add parsley and chives for garnish.
