Mushrooms and Artichokes

INGREDIENTS
  • 2 lb. fresh mushrooms
  • 2 (7 oz.) cans artichokes
  • 1 c. vinegar
  • 1/2 c. oil
  • 1 garlic clove, chopped
  • 1 Tbsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. thyme
  • 1/2 tsp. oregano
  • 1 Tbsp. parsley flakes
  • 1 onion, sliced
DIRECTIONS
  1. Drain artichokes. Wash and drain mushrooms. Combine
  2. vinegar, oil, garlic, salt, pepper, thyme, oregano, parsley and
  3. onion. Mix well. Add mushrooms and artichokes. Marinate
  4. overnight.
