Mussels in Zucchini Basil Broth
INGREDIENTS

  • 1 lb zucchini
  • 3/4 cup basil leaves
  • 1 medium shallot
  • 2 garlic cloves
  • 1 cup water
  • 1/2 cup dry white wine
  • 3/4 t salt
  • 1/4 t pepper
  • 1/3 cup olive oil
  • 4 lb mussels
DIRECTIONS
  1. Puree zucchini, basil, shallot, garlic, water, wine, salt, pepper and olive oil until smooth. Transfer purée to a large pot; add mussels. Bring to a simmer; cover and cook until mussels just open, 5 - 8 minutes.
