Mussels in Zucchini Basil Broth

- 1 lb zucchini
- 3/4 cup basil leaves
- 1 medium shallot
- 2 garlic cloves
- 1 cup water
- 1/2 cup dry white wine
- 3/4 t salt
- 1/4 t pepper
- 1/3 cup olive oil
- 4 lb mussels
DIRECTIONS
- Puree zucchini, basil, shallot, garlic, water, wine, salt, pepper and olive oil until smooth. Transfer purée to a large pot; add mussels. Bring to a simmer; cover and cook until mussels just open, 5 - 8 minutes.
