Mustard Crusted Salmon
  • 2 tbsp white vinegar
  • 1 tbsp sugar
  • 3 tbsp Dijon mustard
  • 1 tsp dry mustard
  • 1/3 cup vegetable oil
  • 4 salmon fillets
  • 3 tsp dried dill
  • salt and pepper to taste
  • 1 cup bread crumbs
  1. Mix together vinegar, sugar, dijon mustard and dry mustard with wire wisk. Add vegetable oil whipping vigorously with wisk until well blended. Preheat oven to 375F.
  2. In a lightly-greased baking dish, place fillets skin side down. Season with salt, pepper and dill. Combine 3/4 of the mustard mixture with the bread crumbs and cover each fillet. Bake 15-18 mins, or until baked through and crust is crisp and golden. Top with remaining mustard sauce
