My Mom's Lemon Bars
INGREDIENTS
- 1/2 Cup of Butter @ room temp.
- 1 Cup AP Flour
- 1/4 Cup Powdered Sugar
- 2 eggs, slightly beaten
- 2 TBSP Lemon Juice, freshly Squoze
- 1 Cup Granulated Sugar
- 2 TBSP AP Flour
- 1/2 tsp Baking Powder
DIRECTIONS
- Blend the three ingredients with a pastry whisk.
- Form into a loose ball and press it into a slightly greased 9 inch glass pan.
- Bake 15 minutes @ 350 and DO NOT OVERBAKE IT.
- Combine the eggs and lemon juice.
- Sift sugar, flour, and baking powder together in a separate bowl and stir into the lemon mixture slowly.
- Pour over warm (not hot) crust.
- Bake for 25 minutes at 350.
- Dust with powdered sugar.
- Let cool completely before cutting.
- Cover LIGHTLY if there's any left.
