Naked Chicken Burgers
INGREDIENTS
  • 1.5 lbs. ground chicken
  • 1 egg
  • 2 Tbls tomato paste
  • ¼ cup grated red onion
  • ¼ cup grated carrot
  • ¼ cup grated zucchini
  • ¼-1/2 cup whole wheat or gluten free bread crumbs
  • 1 tsp. cumin
  • ½ tsp. chili powder
  • ¼ tsp. allspice
  • 1 tsp. parsley
  • 1 tsp. salt
  • ½ tsp. black pepper
DIRECTIONS
  1. Combine all vegetables, seasonings, bread crumb and egg in a large bowl.
  2. Add chicken and mix using hands or a hand mixer until well combined.
  3. Shape into patties. Heat olive oil in a large pan over medium high heat.
  4. Cook patties until browned on one side (about 4 minutes) flip and continue cooking until cooked through (about 4 more minutes).
  5. Serve in lettuce wraps.
