Nanas Goreng Indonesian fried pineapple)

  • 12 fresh pineapple rings
  • 1/2 cup rice flour*
  • 1 cup all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon brown sugar
  • 1 large egg, lightly beaten
  • 1 cup thick coconut milk
  • 1 cup water
  • oil for deep frying
  • *Can be purchased at your local Asian food market.
DIRECTIONS
  1. Using an electric mixer, beat the rice flour, all purpose flour, baking powder, salt, brown sugar, egg, coconut milk and water.
  2. Let stand for about 25 minutes.
  3. Heat the oil to the smoking point, then reduce heat slightly.
  4. Dip the pineapple rings one by one into the batter, then slide in the oil. (Don't fry more than three at a time).
  5. Cook until golden, turning once or twice.
  6. Lift out on a slotted spoon and drain.
  7. Serve while hot with coconut ice cream.
