Nestle Mississippi Mud Pie

  • 1 1/2 c. confectioners' sugar
  • 6 Tbls. butter
  • 1/2 c. heavy cream
  • 3 envelopes Nestle Choco Bake
  • 3 Tbls. Light corn syrup
  • dash of salt
  • 1 tsp. vanilla
  • 1 prepared chocolate crumb pie crust
  • 3/4 c. chopped pecans, divided
  • 3 pints coffee ice cream (I love Ben and Jerry's Coffee Coffee Buzz Buzz for this!)
  • Whipped cream
DIRECTIONS
  1. In a small saucepan, combine sugar, butter, chocolate, corn syrup, salt and cream over low heat, stirring constantly until mixture is smooth
  2. Stir in vanilla and remove from heat
  3. Cool to room temperature
  4. Spread half chocolate sauce in bottom of pie crust and sprinkle with 1/4 pecans
  5. Layer about half of ice cream into pie, using thin scoops.
  6. Repeat, pecans, sauce, and ice cream layer once
  7. Freeze until firm, about 4 hourse
  8. Serve with whipped cream and any remaining sauce
