Nestle Mississippi Mud Pie

- 1 1/2 c. confectioners' sugar
- 6 Tbls. butter
- 1/2 c. heavy cream
- 3 envelopes Nestle Choco Bake
- 3 Tbls. Light corn syrup
- dash of salt
- 1 tsp. vanilla
- 1 prepared chocolate crumb pie crust
- 3/4 c. chopped pecans, divided
- 3 pints coffee ice cream (I love Ben and Jerry's Coffee Coffee Buzz Buzz for this!)
- Whipped cream
DIRECTIONS
- In a small saucepan, combine sugar, butter, chocolate, corn syrup, salt and cream over low heat, stirring constantly until mixture is smooth
- Stir in vanilla and remove from heat
- Cool to room temperature
- Spread half chocolate sauce in bottom of pie crust and sprinkle with 1/4 pecans
- Layer about half of ice cream into pie, using thin scoops.
- Repeat, pecans, sauce, and ice cream layer once
- Freeze until firm, about 4 hourse
- Serve with whipped cream and any remaining sauce
