New Zealand Pumpkin Soup

  • 1 small pumpkin
  • 2 large potatoes
  • 2 small oonions
  • 1 clove of garlic minced
  • 1 T. of butter or oil.
  • 2 c. of stock
  • nutmeg
  • salt
  • pepper
  • grated cheese
DIRECTIONS

  2. New Zealand Pumpkin Soup
  3. Cook (stam/boil) 1 small pumpkin (peeled and diced) and 2 large potatoes(peeled and diced.) Saute 2 small oonions, diced and 1 clove of garlic minced in 1 T. of butter or oil. Combine veggies with 2 c. of milk. Blend unitl smooth. Add 2 c. of stock. Season with nutmeg and salt & pepper. Serve hot with grated cheese on top.
