No Bake Peanut Butter Cookie

  • 1 cup almonds
  • 3/4 cup pitted dates
  • 1/2 cup peanut butter
  • sprinkle sea salt - only if unsalted peanut butter is used.
  1. Blend almonds and dates in your food processor until your mixture is a crumbly meal.
  2. Add peanut butter and salt.
  3. Process on a slow speed until the mixture is able to stick together when pressed.
  4. Scoop a Tbsp full, roll into a ball and press down with a fork.
  5. Store in the fridge - they will set up when chilled.
Amazing that something so quick and easy can taste so darn good. Double up on the batch if you are sharing. They store well in the fridge or freezer.
