No Bake Pumpkin Cookies

INGREDIENTS
  • 1/3 c honey
  • 1/3 c almond butter
  • 1/3 c coconut oil
  • 1/4 c pumpkin puree
  • 1/2 tsp cinnamon*
  • 1/4 tsp nutmeg*
  • 1/4 tsp ginger*
  • 1/4 tsp cloves*
  • 1/4 tsp allspice*
  • 1/2 tsp vanilla
  • 2 c shredded unsweetened coconut
  • *Or 1 1/2 tsp pumpkin pie spice
DIRECTIONS
  1. *Mix everything except coconut in a large microwave safe bowl
  2. *Stir until well combined and microwave for 20 seconds
  3. *You can skip this step if you don’t like using the microwave, but it melds the flavors of the sauce
  4. *In the same bowl, add in shredded coconut and mix well
  5. *Scoop 1 tbsp mounds onto a cookie sheet lined with parchment paper or silicon mat
  6. *Refrigerate for 2 hours to set
  7. *Move to airtight container and store in fridge for up to 5 days
