No Fail Vanilla Cupcakes

  • 1 1/4 cups cake flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 3/4 cups sugar
  • 1 1/2 tsp vanilla extract
  • 1/3 cup vegetable oil
  • 1/2 cup buttermilk
DIRECTIONS
  1. In a medium size bowl, whisk together the cake flour, baking powder, baking soda and salt. Set flour mixture aside
  2. Using an electric mixer, beat 2 eggs with the whisk attachment (20 seconds)
  3. Add sugar and continue to beat
  4. Add vanilla and oil and beat on medium speed
  5. Reduce mixer speed to low and slowly add half of the flour mixture
  6. Add half of the buttermilk
  7. Add the rest of the flour mixture and the rest of the buttermilk.
  8. Beat until combined and smooth
  9. Scrape down the sides of the mixing bowl as needed
  10. Pour batter into lined muffin pan, filling half full
  11. Bake for 12 minutes at 350 degrees
  12. Cool in the pan before removing
