No Sugar-Added Eclair Cake
  • 2 pkgs sugar-free vanilla pudding
  • 2 tsp vanilla
  • 3 cups skim milk
  • 1 tub free cool whip
  • 1 pkg low-fat graham crackers
  • 1 tub chocolate frosting, 50% reduced sugar
  1. Mix pudding with skim milk and vanilla until slightly thickened. Fold in cool whip. In baking dish, layer graham crackers, pudding mixture, graham crackers, pudding mixture, then another layer of graham crackers. I put the frosting tub in the microwave for 1 minute and pour right over the top of the "cake". Chill until ready to serve.
  2. The "full fat" recipe of this cake is a favorite of my youth group at church, and of my family. I had gastric bypass 1-1/2 years ago, and came up with a way that I could still have a small amount of this cake. My support group loves it, and no one else can tell the difference!
  3. You can sub any kind of pudding for a different flavor. Banana is great, just add sliced bananas between layers over the crackers. Cheesecake pudding is also wonderful, and instead of the frosting I put the no-sugar added cherry pie filling over the top.
