Noodle Kugel with Apples
  • 4 eggs, beaten
  • 6 tablespoons sugar
  • 1 teaspoon ground cinnamon
  • 1 pound wide noodles, cooked and drained
  • 2 apples, peeled and sliced
  • 1/2 cup raisins
  • 2 teaspoons vanilla
  • pinch of salt
  • 8 tablespoons butter, melted
  • 1/2 cup walnuts, chopped
  1. In a stainless steel bowl combine eggs, sugar, cinnamon, and salt. Add to noodles.
  2. Apples, nuts, vanilla, melted butter and raisins.
  3. Mix well with a wooden spoon and place into well greased 13 x 9 inch baking pan.
  4. Bake at 375ºF until brown on top - about 1 hour.
  5. Remove from oven, let cool somewhat, slice into squares and serve.
Noodle desserts are very popular in Hungary and in other parts of Eastern Europe. This recipe of Noodle Kugel with Apples we didn't find in our Hungarian cookbook, but in a collection of recipes assembled by the staff of Glenbrook Hospital in Illinois "Celebrating Our Ethnic Diversity." It was given to us by our late friend Barbara Crozier, who was a nurse at Glenbrook Hospital.
