Nordic Macaroni and Cheese

- 2 Cups Cubed Ham
- 2 tbsp Butter
- 1/2 cup of green pepper
- 1/4 cup of diced onion
- 2 tbsp flour
- 2 cups of milk
- 4 cups cooked macaroni shells
- 1 cup Jarlsberg cheese, cubed
- 1 tomato, chopped
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp dry mustard
- 1/2 cup Jarlsberg cheese, shredded
DIRECTIONS
- Preheat oven to 350 degrees
- In a large saucepan brown ham in butter.
- Add green pepper and onion, cook until tender
- Remove from heat, add flour, stir
- Add back to heat, gradually add milk, cook until thickened and smooth
- Remove from heat and add remaining ingredients, except shredded cheese
- Spoon into 2 quart casserole dish
- Bake for 20 min
- Add shredded cheese and back for 10 more minutes

Jerry & Carol found this recipe in a newspaper article while living in California. It has become a Kingrey family favorite. Can use swiss cheese instead of the Jarlsberg. I usually adds more onion and green pepper. We like the small shells, but any size can be used.
