Nordic Macaroni and Cheese

  • 2 Cups Cubed Ham
  • 2 tbsp Butter
  • 1/2 cup of green pepper
  • 1/4 cup of diced onion
  • 2 tbsp flour
  • 2 cups of milk
  • 4 cups cooked macaroni shells
  • 1 cup Jarlsberg cheese, cubed
  • 1 tomato, chopped
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dry mustard
  • 1/2 cup Jarlsberg cheese, shredded
DIRECTIONS
  1. Preheat oven to 350 degrees
  2. In a large saucepan brown ham in butter.
  3. Add green pepper and onion, cook until tender
  4. Remove from heat, add flour, stir
  5. Add back to heat, gradually add milk, cook until thickened and smooth
  6. Remove from heat and add remaining ingredients, except shredded cheese
  7. Spoon into 2 quart casserole dish
  8. Bake for 20 min
  9. Add shredded cheese and back for 10 more minutes

Added by Ann Kingrey Jerry & Carol found this recipe in a newspaper article while living in California. It has become a Kingrey family favorite. Can use swiss cheese instead of the Jarlsberg. I usually adds more onion and green pepper. We like the small shells, but any size can be used.
