Norma's Double Breaded Pork Chops - Family Favorite

- 6 thick bone-in or boneless pork chops or one per person
- 2-3 cups saltine crackers crushed in bag with rolling pin
- 2 eggs beaten
- Canola oil for frying
DIRECTIONS
- Dry pork chops and season with salt and pepper
- Dip each pork chop in egg, then dip in crushed saltines
- Re-dip in egg and re-coat with crushed saltines
- Fry in large heavy pan in 1/2 inch oil until browned nicely on each side
- Two methods to continue to cook, you can continue to fry for 30 minutes or longer until internal temperature reaches 145 degrees
- Or remove the browned chops to a baking sheet and put in oven at 350 to continue cooking
