Northwestern Style Grits Casserole

  • 3 Cups Quick Cooking Grits
  • 12 Cups water
  • 8 Eggs slightly beaten
  • 2 Pounds Sharp Cheddar Cheese, shredded
  • 1 Teaspoon Seasoning Salt
  • 1 Teaspoon Tabasco or other Hot Sauce
  • 2 Cups butter
  • ½ Teaspoon Cayenne Pepper
DIRECTIONS
  1. Cook grits in water for 5 minutes or until water is absorbed.
  2. Add remaining ingredients and pour into a well greased 4 quart baking pan.
  3. Bake uncovered at 350ºF for 1 hour.

Folks if you thought that grits is only eaten in the Southern states than you have it wrong. In fact this recipe we found in "A Taste of Oregon" cookbook which was published by Junior League of Eugene, Oregon.
