Not Panera Bread Broccoli Cheddar soup

  • 1tbsp butter
  • 1/2c onion, chopped
  • 1/4c butter, melted
  • 1/4c AP flour
  • 2c milk
  • 2c chicken stock
  • 1.5c broccoli
  • 1c carrots
  • 1 stalk celery
  • 2.5c shredded sharp cheddar cheese
  • salt and pepper
DIRECTIONS
  1. melt 1tbpsn butter over medium-high heat and sauté onion until translucent
  2. whisk 1/4c flour and butter together in a large saucepan over medium heat, cook until roux forms. 3-4 min
  3. Gradually add milk into roux while whisking constantly. add chicken stock and bring to a simmer. add vegetables and cook until tender, 20 min
  4. stir in cheddar cheese into the soup until cheese melts. Blend soup to desired smoothness. season with salt and pepper
