Nutty Chicken Skewers
  • 3 boneless skinless chicken breasts
  • 1/2 cup creamy peanut butter
  • 1 cup water
  • 1 T. soy sauce
  • 1/4 t. ginger
  1. Place chicken breasts between 2 layers of plastic wrap; pound to 1/4 inch thickness. Cut into 6 x 1/2" strips; Set aside. Whisk together peanut butter and water in small pan until smooth. Stir in soy sauce and ginger. Heat over medium heat 3 to 5 minutes, stirring occasionally. Marinate chicken strips in peanut butter mixture for at least 30 minutes. Thread chicken onto wooden skewers that have been soaked in water; broil until golden and juices run clear. Makes 1 to 1 1/2 dozen.
