OLD FASHIONED PRUNE CAKE

  • 1 cup oil - 3 eggs - 1-1/2 cups sugar - 2 cups all purpose flour (sifted)
  • 1 tsp. soda - 1 tsp. cinnamon - 1 tsp. nutmeg - 1 tsp. allspice
  • 1 up buttermilk - 1 cup cooked prunes (seeded and cut in small pieces)
  • 1 tsp vanilla - 1 cup chopped pecans - 1 tsp. salt
DIRECTIONS
  1. Grease and flour a 9 x 13 cake pan.
  2. Pre heat oven to 325%
  3. Sift together dry ingredients.
  4. On medium speed of mixer beat together oil and sugar;
  5. add eggs and beat till light and fluffy.
  6. Add dry ingredients alternately with buttermilk.
  7. Stir in nuts and prunes.
  8. Pour into prepared pan and bake one hour.
  9. Glaze:
  10. 1 cup sugar - 1/2 cup buttermilk - 1/2 stick butter -
  11. 1/2 tsp. soda - 1/2 tsp vanilla
  12. Mix together in a 2 quart cooker.
  13. Cook over low heat (do not stir) until soft ball stage.
  14. Pour over warm cake.
  15. (Soda will cause foaming, stir it down).
RECIPE BACKSTORY
This is a recipe from a cook book I bought at a hospital guild in 1975. The Nuns were raising money to provide some things very much needed in the nursary.
