ORANGE JUICE MUFFINS WITH HONEY SPREAD

  • 2 c. Bisquick baking mix
  • 2 tbsp. sugar
  • 1 egg
  • 1 tsp. grated orange peel
  • 2/3 c. orange juice
  • 2 tbsp. sugar
  • 1/4 tsp. ground cinnamon
  • 1/8 tsp. ground nutmeg
  • Honey Spread (below)
DIRECTIONS
  1. Heat oven to 400 degrees. Grease bottoms only of 12 medium muffin cups. Mix baking mix, 2 tablespoons sugar, the egg, orange peel and orange juice; beat vigorously 30 seconds.
  2. Fill muffin cups about 2/3 full. Mix 2 tablespoons sugar, the cinnamon and nutmeg. Sprinkle each muffin with about 1/2 teaspoon sugar mixture.
  3. Bake 15 minutes.
  4. Serve with Honey Spread.

  7. Beat 1/2 cup margarine or butter, softened, and 1/2 cup honey until fluffy.
