Oatmeal Apricot Squares

  • 1 cup flour
  • 1 cup quick-cooking oats
  • 1/2 cup packed brown sugar
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/2 cup cold butter
  • 3/4 cup apricot preserves
DIRECTIONS
  1. In a large bowl, combine the flour, oats, sugar, salt, and baking soda.
  2. Cut in the butter until the mixture resembles coarse crumbs
  3. Press half of the mixture into a greased 8-inch square baking pan.
  4. Spread with the preserves
  5. Sprinkle with the remaining oat mixture
  6. Gently press down
  7. Bake at 350 F for 38-42 minutes or until golden brown
  8. Cool on a wire rack
  9. Cut into squares
