Oatmeal Peanut Butter Cookies

  • 1 cup whole wheat flour
  • 1 1/4 cup quick cooking oats
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2/3 cup peanut butter
  • 1/2 cup olive oil
  • 1/2 cup packed brown sugar
  • 2 tsp vanilla extract
  • 1/2 cup water
  • 2 large eggs
  • 2/3 cup chopped up dark chocolate bar
  • 1 cup chopped nuts
DIRECTIONS
  1. Directions:
  2. Preheat oven to 350 degrees F.
  3. Combine flour, oats, baking soda and salt in small bowl. Beat oil, peanut butter, sugars and vanilla extract in large mixer bowl until creamy. Add eggs one at a time, beating well. Stir in water. Gradually beat in flour mixture. Stir in chocolate and nuts. Drop by rounded teaspoon (important to not make bigger than this!) onto ungreased baking sheets.
  4. Bake for 8-10 minutes. Cool on baking sheets for 2 minutes, remove to wire racks.
  5. Makes about 5 dozen cookies.
