Oatmeal Raisin Cookies
  • 1 cup (2 sticks) butter or margarine, softened
  • 1 cup firmly packed brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2 cups oats (quick or regular)
  • 1 cup raisins
  1. Preheat oven to 350. Beat together margarine or butter and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamond and salt; mix well. Stir in oats and raisins, mix well. Use a small ice cream scooper to drop dough onto cookie sheet.
  2. Spray the bottom of a round drinking glass with cooking spray, dip onto a plate of sugar. Use the sugar coated bottom of the glass to slightly smash down each cookie. Note: Don't smash too much! The cookies should still be rough around the edges.
  3. Bake 10-12 minutes or until golden brown. Cool 1 minute on cookie sheet; remove to wire rack.
