Oatmeal Scotchies

INGREDIENTS
  • 1 1/4 c flour (usually at least 1 3/4 c)
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 2 sticks buttter
  • 3/4 c granulated sugar
  • 3/4 c packed brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 c rolled oats
  • 11 oz butterscotch flavored morsels
DIRECTIONS
  1. Preheat oven to 375 F
  2. Combine flour, baking soda, cinnamon, and salt in a small bowl. Beat butter, granulated sugar, brown sugar, eggs and vanilla in a large bowl. Graduatlly beat in the flour mixture. Stir in oats and morsels. Add more flour if the mix is too sticky. Drop by rounded tablespoon onto ungreased baking sheet. Bake 7-9 min for chewy and 8-10 min for crispy cookies.
  3. Cool on sheets for 2 min.
  4. Cool the rest of the time on racks.
