Ohio Amish Oatmeal Cake

  • Cake:
  • 1 1/2 cups boiling water
  • 1 cup quick oats
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1/2 cup butter or margarine
  • 2 eggs
  • 1 1/2 cups of flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 tsp. vanilla
  • Topping:
  • 1 cup brown sugar
  • 1 cup coconut
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup evaporated milk
  • 1/2 tsp. vanilla
  • 5 tbs. butter or margarine
DIRECTIONS
  1. Grease a 9x13 inch pan. Preheat oven to 350F. Pour boiling water over the oats. Let mixture cool.
  2. Next cream together the sugars, butter, vanilla and eggs. Add cooled oats to the mixture to incorporate. Sift together the flour, soda, salt and cinnamon. Add the sifted ingredients to the above mixture.
  3. Pour cake batter in to prepared pan and bake for 40 minutes.
  4. To prepare topping; melt brown sugar and butter over medium heat. Then add evaporated milk and vanilla until incorporated. Lastly add coconut, and nuts. Spread topping over warm cake. Place cake under a broiler for two or three minutes until slightly browned.
  5. Note: watch cake closely while under the broiler .
RECIPE BACKSTORY
This is a moist oatmeal cake with a rich topping made of brown sugar, coconut and nuts. This recipe has been in my family for over 40 years and is a favorite of mine.
