Oklahomie Fish Tacos

  • Tacos
  • - 4 fish fillets (I like using cod, but mahi-mahi or catfish works well)
  • - 8 white corn tortillas
  • - 1/2 large lime
  • - Paprika
  • - 1/4 butter (melted)
  • - Salt & Pepper
  • - 1/4 teaspoon Cayenne
  • - 1 teaspoon garlic powder
  • Sauce
  • - 1/2 cup mayo
  • - 1/2 cup sour cream
  • - 1 teaspoon sea salt
  • - 2 chipotle peppers in adobo
  • - Juice from other half of lime
  • - 1 clove garlic (teaspoon of minced garlic)
  • -Cilantro
  • -Queso Fresco
  • -Taco Sauce (Something like Valentina or El Yucateco)
  • -Shredded cabbage
  • -Avocado or guacamole
DIRECTIONS
  1. For Sauce:
  2. -Finely chop chipotle peppers and add to mixing bowl
  3. -Add remaining ingredients and mix thoroughly.
  4. -Cover and refrigerate
  5. For Fish:
  6. -Preheat grill to medium-high heat and lightly oil grates
  7. -Mix paprika, salt & pepper, cayenne, and garlic powder in small bowl
  8. -Prep fillets by brushing with melted butter and seasoning with mixture. Finish by squeezing lime juice over fillets
  9. -Grill 3-4 minutes per side until flaky
  10. -Let fish rest for a few minutes before cutting into pieces
  11. -While fish is resting, warm tortillas on grill
  12. Assemble:
  13. - Top tortillas with fish and any desired toppings; finish with chipotle sauce.
