Old Fashioned Banana Cake

INGREDIENTS
  • 2-1/4 cups sifted flour
  • 1-2/3 cups sugar
  • 1-1/4 tsp. baking powder
  • 1-1/4 tsp. baking soda
  • 1 tsp. salt
  • 2/3 cup evaporated milk
  • 4 tsp. lemon juice
  • 2/3 cup butter or margarine, softened (I prefer butter)
  • 1-1/2 cups mashed, ripe bananas
  • 3 eggs
DIRECTIONS
  1. In a large bowl, sift the first five ingredients.
  2. Mix evaporated milk, lemon juice, butter and bananas.
  3. Gradually add flour mixture, beating at medium speed for 2 minutes.
  4. Add dry ingredients and beat an additional 2 minutes.
  5. Pour into greased and floured 9 x 13 pan and bake at 350 deg. 40 minutes or until done. (Can also use two 8-inch round cake pans)
  6. Frost with powdered sugar icing and sprinkle with chopped pecans or walnuts.
