Old Salem Pumpkin Muffins

  • Servings: 1 1/2 dozen
  • 1/3 cup raisins
  • 1 tbsp all-purpose flour
  • 1/3 cup butter or margarine - softened
  • 3/4 cup firmly packed brown sugar
  • 1 cup canned pumpkin
  • 1/2 cup milk
  • 1/4 cup molasses
  • 2 eggs, beaten
  • 2 cups sifted all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/8 tsp ground cloves
DIRECTIONS
  1. Preheat oven to 375 degrees.
  2. Combine raisins and 1 tbsp flour; stir well and set aside.
  3. Cream butter, gradually add sugar beating well.
  4. Add pumpkin, milk, molasses, and eggs, beating well.
  5. Sift flour, baking powder, salt and spices together.
  6. Add to creamed mixture, stirring all until moistened and add raisins
  7. Spoon into greased muffin pan - filling full.
  8. Bake for 20 minutes.
