One Pan, Breakfast Burritos

  • 4 flour tortillas
  • 10 strips bacon
  • 4-6 eggs
  • 2 Tbls milk
  • Salt and Pepper to taste
  • 4 Tbls shredded cheese
  1. In large skillet, cook bacon until desired crispness (place on paper towel to catch excess fat) and set aside. Drain fat into heat resistant container and wipe out pan with paper towel.
  2. Crack desired amount of eggs into bowl. Add milk, salt and pepper and whisk until well scrambled. Spay pan with non-stick spray and cook eggs over medium heat until done and set aside.
  3. Turn burner up to medium high. Lightly butter one side of tortilla and place in pan. Leave in there for 30 seconds to 1 minute. Remove when tortilla is slightly browned.
  4. To assemble: Lay tortilla (browned side up) on plate. Place desired amount of eggs in a strip in center of the tortilla. Top with 1 tbls cheese, then 2 1/2 slices of bacon. Fold up like a burrito and eat.
