Orange BBQ Pork Tenderloin

  • 2-3 lb. package of Pork Tenderloin
  • Freshly ground sea salt
  • Freshly ground black pepper
  • For the marinade:
  • 1 c. of your favorite BBQ sauce
  • Grated zest and juice of one orange
  • 2 T. Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 t. (more or less to taste) crushed red pepper
DIRECTIONS
  1. Whisk together ingredients for marinade in a small bowl, set aside. Trim fat and silverskin from pork tenderloins, rinse, pat dry. Place tenderloins in a plastic bag and pour in marinade. Turn to coat all sides. Marinate for at least 30 minutes, preferably overnight in fridge. Next day, bring tenderloins to room temp. Heat grill on high until grill reaches 500F. Turn off heat on one side of grill. Remove tenderloins from marinate, reserving marinade, and season on all sides with freshly ground sea salt and freshly ground pepper. Grill on hot side of the grill about 15 minutes, basting and turning until well browned on all sides. Remove tenderloins to the other side of the grill, leaving the heat turned on the opposite side (which you can take advantage of to grill sweet potatoes). Continue to cook baste and cook tenderloins for another 15 minutes or until instant thermometer registers 145F for medium 160F for well done. Remove tenderloins from grill, let rest 5 minutes before slicing to serve.
