Orange Cheesecake Triangles

  • 1 cup fine graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • Mix together and place in a lightly sprayed 9" square baking pan.
  • Filling:
  • 8 oz cream cheese, soft
  • 4 oz light cream cheese, soft
  • 1/2 cup sugar
  • 3 teaspoons cornstarch
  • 4 tablespoons orange juice
  • 3/4 cup sour cream
  • 2 large eggs
  • 1/2 cup orange marmalade
DIRECTIONS
  1. Process the cream cheeses, cornstarch and sugar. Add the orange juice, sour cream, eggs and mix till creamy. Pour over the crust. Place the pan in a large roasting pan and add enough hot water to come 1/2 up the sides of the pan. Bake about 35-40 minutes. Chill several hours or overnight.
  2. Place the marmalade in a small saucepan over medium heat. Stir to melt. Pour over the cheesecake and chill till the marmalade is cold. Cut the cake into squares then into triangles.
  3. Note: I would allow the marmalade to cool slightly before you pour over the cake.
