Orange Coconut Cupcakes

INGREDIENTS
  • 1 cup sugar
  • 2/3 cup vegetable oil
  • 2 eggs
  • 1 cup orange juice
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 (11 ounce) can mandarin oranges, drained and chopped
  • 1 cup vanilla or white chips
  • zest of half an orange
  • TOPPING:
  • 1 cup flaked coconut
  • 1/3 cup sugar
  • 2 tablespoons butter, melted
  • zest of half an orange
DIRECTIONS
  1. Preheat oven to 375F.
  2. In a mixing bowl, combine the sugar, oil, eggs and orange juice; mix well. Combine dry ingredients; stir into orange juice mixture just until moistened.
  3. Fold in oranges and chips.
  4. Fill greased or paper-lined muffin cups two-thirds full.
  5. Combine topping ingredients; sprinkle over cupcakes.
  6. Bake at 375 degrees F for 15-20 minutes or until golden brown.
