Orange Pecan Cookies

  • Preparation Time: 15 minutes + chilling
  • 1 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 2 tbsp orange juice
  • 1 tbsp grated orange peel
  • 2 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chopped pecans
DIRECTIONS
  1. In a large mixing bowl, cream the butter and both of the sugars until light and fluffy
  2. Beat in the egg, orange juice, and peel
  3. Combine the flour, baking soda, and salt
  4. Gradually add to the creamed mixture
  5. Mix well
  6. Stir in the pecans
  7. Shape into two 11 1/2 inch rolls
  8. Wrap each in plastic wrap
  9. Refrigerate for 4 hours or overnight
  10. Unwrap the dough
  11. Cut into 1/4 inch slices
  12. Place 2 inches apart on lightly greased baking sheets
  13. Bake at 400 F for 7-8 minutes or until golden brown
  14. Remove to wire racks to cool
