Oriental Beef & Vegetable Skillet

INGREDIENTS
  • 1 lb. boneless beef sirloin steak steak, 3/4" thick
  • Vegetable cooking spray
  • 2 cups broccoli flowerets
  • 2 cups sliced mushrooms
  • 2 cups onion wedges
  • 1/2 tsp. garlic powder OR 4 cloves garlic, minced
  • 1 can (10 3/4 oz.) Campbell's® Healthy Request® Condensed Cream of Mushroom Soup
  • 1/2 cup water
  • 1 tbsp. low-sodium soy sauce
  • 4 cups hot cooked rice, cooked without salt
DIRECTIONS
  1. SLICE beef into very thin strips.
  2. SPRAY skillet with cooking spray and heat over medium-high heat 1 min.
  3. Add beef and cook until browned, stirring often. Remove beef.
  4. REMOVE skillet from heat.
  5. Spray with cooking spray.
  6. Add broccoli, mushrooms, onion and garlic powder and cook until tender-crisp.
  7. ADD soup, water and soy. Heat to a boil.
  8. Return beef to skillet and heat through. Serve over rice.
  9. Serves 4.
  10. TIP: To make slicing easier, freeze beef 1 hr.
  11. To save time, purchase pre-washed, pre-chopped vegetables from the salad bar.
