Oven-Fried sweet potatoes

INGREDIENTS
  • 4 sweet potatoes (about 2 1/2 pounds)
  • 4 tablespoons vegetable oil
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
DIRECTIONS
  1. Preheat oven to 450°F.
  2. Peel sweet potatoes.
  3. Cut into 1/4-inch slices.
  4. Place slices in a large resealable plastic bag.
  5. Add oil, thyme, salt and pepper.
  6. Shake bag to coat slices with oil mixture.
  7. Spread potato slices evenly in a single layer on 2 baking sheets.
  8. Bake for 10 minutes.
  9. Turn; bake until crisp and tender, about 5 minutes longer.
  10. Remove potatoes from baking sheets.
  11. Serve immediately.
