Oxtail Soup

  • Ingredients:
  • 4 lbs oxtails
  • 2 cups fine diced onion
  • 1/4 cup minced garlic
  • 2 cups red wine
  • 2 cups beef stock
  • 4 oz tomato paste
  • 3 bay leaves
  • thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 2 Tbsp worcestershire sauce
  • 2 Tbsp yellow mustard
  • Mashed potatoes with scallions
  1. Salt and pepper oxtails. Sear in a very hot soup pot on all sides. remove oxtails and add onions and garlic. Saute on medium heat about 6 minutes. Add tomato paste, half the wine and half the beef stock. Add spices. Place oxtails back into pot. Add remaning wine and stock. Reduce heat and simmer for 3 to 4 hours. When the meat is fallin of the bones, remove oxtails to cool. Strain the sauce, discard onions, garlic etc. Pick the meat off bones with your fingers. Put meat back into smooth sauce and heat up gently. Ladle over rice, noodles or mashed potatoes. See video below.
