PEACHES AND CREAM PANCAKES

INGREDIENTS
  • 2 c. Bisquick baking mix
  • 1 egg
  • 1 1/2 c. milk
  • 2 tbsp. packed brown sugar
  • 1/2 tsp. ground cinnamon
  • 1 (29 oz.) can sliced peaches, drained
  • 3/4 c. whipping (heavy) cream, whipped
DIRECTIONS
  1. Beat all ingredients except peaches and whipping cream with wire whisk or hand beater until well blended.
  2. Pour by scant 1/4 cupfuls onto hot griddle (grease griddle if necessary).
  3. Cook until pancakes are dry around edges.
  4. Turn; cook until golden brown.
  5. Top with peaches and whipped cream.
