PEPPERMINT PATTIE BROWNIES

  • 24 small (1½") mint patties, unwrapped
  • 1½ c. butter, melted
  • 3 c. sugar
  • 1 T. vanilla
  • 5 eggs
  • 2 c. flour
  • 1 c. baking cocoa
  • 1 tsp. baking powder
  • 1 tsp. salt
DIRECTIONS
  1. Heat oven to 350°. Grease a 9 x 13 pan.
  2. In large bowl, stir together butter, sugar and vanilla. Add eggs and beat until well blended. Stir in flour, cocoa, baking powder and salt, blend well. Reserve 2 c. batter. Spread remaining batter in pan. Arrange patties on top of batter. Spread reserved 2 c. batter over patties. Bake for 50 - 55 minutes. Cool and cut into squares.
