PICKLED MUSHROOMS

INGREDIENTS
  • 1/3 cup red wine vinegar
  • 1/3 cup oil
  • 1 sm. onion, sliced
  • 1 tsp. salt
  • 2 tsp. dried parsley
  • 1 tsp. prepared mustard
  • 1 tbsp. brown sugar
  • 2 - 6 oz. cans button mushrooms
DIRECTIONS
  1. Combine all ingredients except mushrooms in a saucepan and bring to a boil.
  2. Add the mushrooms.
  3. Simmer for 5 to 6 minutes.
  4. Chill.
  5. Store in a covered container in the fridge.
  6. Drain and serve.

In the days when I was more ambitious, not that these are hard to do, I used to make these to put out to nibble on when we had friends over.
