PORK CHOPS AND BARLEY CASSEROLE

  • 1 1/2 c. water
  • 1 (16 oz.) can tomatoes,
  • undrained
  • 3/4 c. barley
  • 1 tsp. chili powder
  • 1/4 tsp. dry mustard
  • 1/4 tsp. salt and pepper
  • 1 Tbsp. vegetable oil
  • 4 pork chops
  • 1 medium green pepper
  • 1 medium onion, chopped
  • 1 (8 oz.) can tomato sauce
  • paprika
DIRECTIONS
  1. Bring the water, tomatoes, barley, chili powder, dry mustard, salt and pepper to a boil.
  2. Cover and simmer for 20 minutes.
  3. Brown pork chops in oil for 5 minutes on each side; set aside.
  4. Chop green pepper and onions; cook for 5 minutes.
  5. Stir in tomato sauce and barley mixture.
  6. Pour into greased 12 x 8 x 2-inch baking dish. Arrange chops on top and sprinkle with paprika. Cover tightly with foil.
  7. Bake for 40 minutes at 350 degrees.
  8. Remove foil; top chops with pepper rings.
  9. Bake for 10 minutes.
