PORK TENDERLOIN
INGREDIENTS
- Onion(s), sliced approximately 1/4-inch thick
- 1 - 11 ounce package pork tenderloin
- Mesquite seasoning
- 1/2 cup water OR coffee
- Pork Tenderloin
DIRECTIONS
- Slice onion and place slices in baking pan.
- Lay tenderloin on top of onion slices.
- Sprinkle with mesquite seasoning.
- Pour water or coffee around tenderloin.
- Bake at 350 degrees for 35 to 45 minutes, until internal temperature reaches 160 degrees.
- Remove from oven and let meat rest for 10 minutes before slicing.
RECIPE BACKSTORY
OPTIONAL:
Pour drippings and onions blender. Process a few seconds, until smooth. Pour into sauce pan.
In cup, stir together 1 to 2 Tablespoons corn starch and 1/4 cup cold water. Add to drippings.
Cook over medium heat, stirring constantly, until mixture boils. Lower heat and cook for 3 to 4 minutes.
Add additional liquid, if needed. Season to taste. Great over potatoes, pasta, or rice.
VARIATIONS are endless. Use your favorite seasoning combinations.
