• 3 C peeled, cubed potatoes
  • 1 carrot grated
  • 1/2 C chopped onion
  • 2 TBS parsley
  • 1 tsp salt
  • 1 tsp pepper
  • 1 stalk celery sliced (or 2 tsp celery seed)
  • 14 Oz can Chicken Broth
  • 3 C milk
  • 3 TBS flour
  • 8 Oz cheese (any you like - Velveeta, cheddar, pepper jack, etc)
  • Optional - ham, bacon, ground beef, sausage
  1. I used ground turkey sausage. Added olive oil to my small stock pot. Added turkey sausage, onions, celery, carrot. Once turkey is cooked through, add diced potatoes and chicken broth. Add enough water to cover potatoes.
  2. Add say, pepper and parsley. Bring to a boil and cook 10-15 min or until potatoes are tender. Add flour to milk in a large measuring cup. Mix well and add to pot. Stir in cheese. Simmer for 15-20 until cheese is melted and soup thickens.
My most absolute favorite soup of all time - delicious every single time.
