PUMPed KIN Muffins!!

INGREDIENTS
- 1 1/2 cups whole wheat flour
- 1 cup quick oats
- 3/4 cup firmly packed brown sugar splenda blend
- 3 scoops Whey Crisps Natural
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 tsp pumpkin pie spice
- 1 cup canned pumpkin
- 3/4 cup fat-free milk
- 1/3 cup canola oil
- 2 egg whites
DIRECTIONS
- Preheat oven to 400 degrees and line a 12-cup muffin tin with paper liners. Combine dry ingredients in a large bowl. In a medium bowl, combine the pumpkin, milk, oil and egg(s), blending well. Stir pumpkin mixture into dry ingredients until the dry ingredients are just moist. Fill muffin liners ¾ full and bake for 22-25 minutes.
