Pac Choi Salad
INGREDIENTS
  • Servings: 2 as a side dish
  • GINGER DRESSING
  • 1 inch fresh ginger root peeled and quartered
  • 2 cloves garlic (or 2 garlic scapes), peeled & chopped
  • 2 Tbsp rice vinegar seasoned
  • 1 Tbsp Dijon mustard
  • 1 Tbsp lemon juice
  • 1 tsp tamari or soy sauce
  • 1/4 cup sesame oil
  • Pinch red pepper flakes
  • SALAD
  • 1 head Pac Choi (or Bok Choy), sliced in thick 2-3 cm pieces
  • 1/4 onion, peeled and chopped (or 2-5 green onions, chopped)
  • 1 sweet pepper, sliced
  • 1/2 to 1 white turnip (rabiole), cut in julienned or shaved with peeler (optional)
  • 1 carrot, cut in julienned or shaved with peeler
  • TOPPING (OPTIONAL)
  • 1/4 cup plain roasted peanuts crushed/chopped
DIRECTIONS
  1. Combine the dressing ingredients in a mason jar or food processor or blender.
  2. Close the mason jar and shake well OR puree until smooth.
  3. Combine the salad ingredients in a large bowl.
  4. Toss together.
  5. Toss in the dressing, or serve it on the side.
  6. Top dressed salad with peanuts or other nuts of choice (optional).
