Pad Thai Salad

  • Carrot
  • Cabbage
  • Zucchini
  • Peanuts
  • Lime
  • Ginger
  • Garlic
  • Chilli
  1. Peel and slice the carrots, zucchini and cabbage into small shavings.
  2. Add to a large plate and combine.
  3. Finely chop ginger, lime and garlic to stir into the shavings.
  4. Chop peanuts and coriander and sprinkle over the top.
  5. Add chopped lime to plate for serving.
This recipe was created when the electricity was out in our kitchen, with all of the incredible ingredients we had laying around. Peanuts give the dish an amazing crunch whilst the lime creates a tangy zest. The great thing is that you can make this as spicy as you like depending on your pallet.
