Paleo Veggie Waffles

- 3 large Spiralized Carrots (fine)
- 1 Spiralized Butternut Squash neck (peeled)
- 1 Spiralized rutabaga (peeled)
- 4 eggs whisked
- 2 tsps Tapioca Starch
- 1 tsp garlic powder
- 1 tsp harissa powder or paste
- 1 tsp salt
- 1/2 tsp pepper
- coconut oil spray for waffle iron
DIRECTIONS
- Whisk eggs in a large bowl, add spices and tapioca, whisk well
- Add spiralized veggies to egg mixture
- Heat waffle iron to higher setting
- Spray waffle iron
- Fill the waffle iron with veggie/egg mixture
- Cook until golden brown
- Serve hot with your favorite sauce
