Paleo Veggie Waffles
INGREDIENTS

  • 3 large Spiralized Carrots (fine)
  • 1 Spiralized Butternut Squash neck (peeled)
  • 1 Spiralized rutabaga (peeled)
  • 4 eggs whisked
  • 2 tsps Tapioca Starch
  • 1 tsp garlic powder
  • 1 tsp harissa powder or paste
  • 1 tsp salt
  • 1/2 tsp pepper
  • coconut oil spray for waffle iron
DIRECTIONS
  1. Whisk eggs in a large bowl, add spices and tapioca, whisk well
  2. Add spiralized veggies to egg mixture
  3. Heat waffle iron to higher setting
  4. Spray waffle iron
  5. Fill the waffle iron with veggie/egg mixture
  6. Cook until golden brown
  7. Serve hot with your favorite sauce
